A couple weeks ago, foodbuzz sent a email out notifying their foodie community members of an opportunity. This happens about once a week, and each food related opportunity involves some sort of recipe creation, blog post, photography, etc. challenge. The one from a couple weeks ago came from POM Wonderful and involved a simple question:
“If you were given a crate of pomegranates, how would you use them to host a dinner party?”
I don’t always respond to the opportunities, but this one seemed really cool! Spending only a few moments in thought, I submitted what immediately came to mind in regards to a dinner menu for a small gathering. Guess what? I was picked to be one of the100 across the country to host a dinner party! Soon to be delivered to my front stoop: a case of pomegranates and a party pack to help.
Here’s what I proposed:
Roasted Chicken
with Pomegranate Orange Glaze
Couscous Salad
with Pomegranate Arils & Toasted Almonds
Field Green Salad
Pomegranate Vinaigrette
Lime Pomegranate Cheesecake
with a shortbread crust
with a shortbread crust
The last thing I mentioned was some sort of a drink with pomegranate juice. And I thought it might be fun to make that my November Food Challenge question.

I always enjoy a good pomegranate cosmo!
I was thinking a pomegranate martini, but I feel I can be a bit more creative with a little bit more thought.
I like pomegranate vodka with ginger ale.
