Easy Fried Rice for One
This easy fried rice for one is something my daughter loved to eat and make when she was an elementary schooler!
Ingredients
- 1 cup Minute® Ready to Serve Rice
- 1 mushroom, diced
- 1 egg
- 1 tablespoon butter
- 1/8 teaspoon sea salt
- 1 teaspoon soy sauce
Instructions
- Set a small non-stick or cast iron skillet over medium-low heat and add the butter. Whisk the egg and salt together in a small bowl.
- Once the butter has melted, pour the egg and the mushrooms into the skillet and use a non-stick spatula to gently stir them, folding them over a few times until they're just cooked through (about a minute). Remove them from heat.
- Meanwhile, prepare the Minute® Ready to Serve Rice according to package instructions.
- Once the rice has finished cooking, add the soy sauce and the egg mixture to the cup, then stir to combine!
Notes
We used Minute® Ready to Serve Rice brown rice, but you can choose your favorite variety.
